Giveaway: $50 American Express Gift Card

laysingredientsAs a girl who lives alone in a tiny studio apartment, I don’t get to entertain nearly as much as I’d like.

Last night, though — as it was a balmy 98 degrees outside my window and I was hanging with my family, there was no way I was going to turn on the oven, no matter how much I enjoy cooking.

As I’ve mentioned in early posts this week, my air-conditioner fried in the middle of this intense heat wave and I JUST (as in yesterday!) got a new one. It’s been intense, I’m a bit shell-shocked.

In an effort to keep my apartment cool, I avoid turning on my oven unless it’s really necessary. That means I grill a lot, and find ways to make creative snacks that involve no heat at all.

Frito-Lay had recently shared some recipes and coupons to incorporate them into my summer snacks, and this seemed a perfect opportunity to buy some Lay’s® Classic potato chips and Tostitos® Scoops!® tortilla chips, and get preparing.

I often shun snack foods because not all chips are created equal. I try to look for chips made with simple ingredients, like Lay’s® Classic potato chips, made with potatoes, oils and salt, and Tostitos® Scoops!® tortilla chips, made with corn, oils and salt.

cornbitesLast night, I used these chips as a vehicle to scoop up extra nutrition by pairing them with wholesome dips such as these Corn and Black Bean Bites. They came out so delicious! (If you follow me on Instagram, you can see the whole recipe process!)

The corn and black bean bites are very healthy and easy to make — a non-cooking required mix of 2 cups frozen sweet corn, thawed, 1/2 cup canned black beans, rinsed and drained, 1 bunch green onions, chopped, 1/2 avocado, sliced
Juice of half a lime, 1/4 cup chopped cilantro, 1 cup TOSTITOS® Restaurant Style Salsa. My other dip, my own personal guacamole, used all those ingrdients as well, just minus the corn and switching out the salsa for fresh-cut tomatoes and a jalapeño. Both went over very well and everyone was scooping up and looking for seconds!

I made two recipes — the corn and black bean bites and also my own homemade guacamole — both utilize a lot of the same ingredients, so it’s great for avoiding waste, and including my lucky find of fresh from garden cilantro really made all the difference.

Giveaway: So you can buy these ingredients and conjure up a mini summer get-together of your own, I’m giving away a $50 American Express gift card. To have your chance to win, please share some treats you like to make in your own summer entertaining. Deadline to enter is August 1. Please make sure you are following on Twitter at @AlyWalansky and also subscribe to my blog (you can do so via the subscribe box at right). For extra credit, please also follow me on Instagram — I promise to be entertaining! Good luck!

I participated in this sponsored campaign for One2One Network. I received monetary compensation and product to facilitate my post, but all opinions stated are my own.

One of my favorites is a layered dip that I make. In a pyrex pie plate, I layer spread out cream cheese, refried beans, salsa and shredded cheddar cheese. I microwave until cheese ontop is melted and serve the dip with Frito corn chips. It’s always a hit.

  13. I’d use the scoops to scoop up my crab dip! I made Crab and Sausage Stuffed Mushrooms today!

Con Ed is conserving power in my neighborhood and I’ve had no Air during the worst of this heat wave either, and the idiots who had this apartment before me put in a tin roof so it’s an icebox in winter and a Boiling Inferno in summer and without AC it’s been un-bearable so I can definitely empathize. Yet, so typical New York, my annoying downstairs neighbors and their loud radio is working just fine! GRRRR
